Menu Plan Monday

My Menu is tentative as I started back to work today and my best friend is here and sure to want take-out. So here is my plan so far as I know today:




Sunday: USMC SOS
Monday: Fried Chicken and french fries
Tuesday: Tex Mex Chicken 'n' Rice
Wednesday: Gravy Baked Pork Chops
Thursday: Hungarian Goulash
Friday: Ground Beef Stroganoff
Saturday: Slow Cooked Garlic Chicken


USMC SOS
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Yields: 4 servings
"Browned ground beef is combined with a browned roux-based sauce using evaporated milk and beef broth. It is served on toast."

INGREDIENTS:
1 pound ground beef
1 1/2 tablespoons butter
3 tablespoons all-purpose flour 1 cup beef broth
1/2 cup evaporated milk
salt and pepper to taste

DIRECTIONS:
1. Brown the ground beef in a medium skillet over medium-high heat, until meat is no longer pink. Drain excess fat and set aside.
2. Melt the butter or margarine in a medium saucepan over medium heat. Slowly add the flour, stirring constantly, to form a brown roux.
3. Pour in beef broth and milk, mixing well. Add ground beef, then season with salt and pepper to taste.


Tex-Mex Chicken 'N' Rice

6 ounces tomato paste
3 cups hot water
1 package taco seasoning mix
1 pound boneless & skinless chicken breast -- cut in 1/2" cubes
2 medium onions -- chopped
1 medium green bell pepper -- chopped
4 ounces green chiles -- diced
3/4 teaspoon garlic pepper

1. In a slow cooker mix together all ingredients except the chiles and garlic pepper.
2. Cover and cook on low heat for 4 to 4 1/2 hours or untl the rice is tender and the chicken is white throughout; do not overcook or the rice will be mushy.
3. Stir in the chiles and garlic peppe. Serve at once.

Gravy Baked Pork Chops
Prep Time: 10 Minutes
Cook Time: 45 Minutes
Yields: 4 servings
"These pork chops will melt in your mouth. They are very good and easy to assemble. They are first sauteed in butter, then baked in a creamy mushroom sauce."

INGREDIENTS:
4 (1 1/4 inch thick) pork chops
salt and pepper to taste
1 tablespoon butter
3/4 cup milk 1/4 cup water
1 (10.75 ounce) can
condensed cream of mushroom soup

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. Season pork chops with salt and pepper to taste. Melt the butter in a large skillet over medium high heat. Saute the pork chops in the butter for about 5 minutes per side.
3. In a separate medium bowl, combine the milk, water and soup. Place the pork chops in a 9x13 inch baking dish and pour the soup mixture over the chops.
4. Bake at 350 degrees F (175 degrees C) for 45 minutes.


Hungarian Goulash
Prep Time: 15 Minutes
Cook Time: 10 Hours 15 Minutes
Yields: 6 servings
"A slow cooker version of the traditional paprika stewed beef with dry mustard and Worcestershire for added zip."

INGREDIENTS:
2 pounds beef chuck roast, cubed
1 large onion, diced
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar 2 teaspoons salt
2 teaspoons Hungarian sweet paprika
1/2 teaspoon dry mustard
1 1/4 cups water, divided
1/4 cup all-purpose flour

DIRECTIONS:
1. Place beef in slow cooker, and cover with onion. In a medium bowl, stir together ketchup, Worcestershire sauce, brown sugar, salt, paprika, mustard, and 1 cup water. Pour mixture over beef and onions.
2. Cover, and cook on Low for 9 to 10 hours, or until meat is tender.
3. Mix 1/4 cup water with flour to form a paste, and stir into goulash. Cook on High for 10 to 15 minutes, or until sauce thickens.

Ground Beef Stroganoff
Prep Time: 10 Minutes
Cook Time: 20 Minutes
Yields: 4 servings
"This fast and easy version of the dish calls for mustard and mayonnaise along with the usual mushrooms and sour cream."

INGREDIENTS:
1 pound ground beef
1/2 cup chopped onion
1 (4.5 ounce) can mushrooms, drained
1/2 teaspoon garlic powder
1/2 teaspoon mustard powder
1/2 cup sour cream
1/2 cup mayonnaise
1/2 cup beef broth
1 (16 ounce) package wide egg noodles

DIRECTIONS:
1. Break up ground meat into a large skillet, and add onion, mushrooms, garlic powder, and mustard powder. Cook and stir over medium heat until the meat is browned and onion is tender. Drain off excess fat.
2. In a small bowl, combine sour cream, mayonnaise, and beef broth. Stir into beef mixture, and cook over low heat for 10 to 15 minutes. Do not stir too much.
3. Meanwhile, cook pasta in a large pot of boiling water until done. Drain. Serve sauce over hot noodles.


Slow Cooked Garlic Chicken

4 skinned chicken breast halves
1 teaspoon salt
2 teaspoons paprika
2 teaspoons lemon pepper
1 large onion, sliced
10 cloves garlic (about 1 medium), un-peeled

Mix together salt, pepper and paprika. Rub all over meat side of chicken breast. Place onion in slow cooker. Place chicken breast side up on onion. Place garlic on chicken. Cover and cook on low in slow cooker for about 6 hours or until juices run clear.

My FIL was in the Marines, when my husband and him were out here in AZ living together, my FIL made this alot. My husband asked me to make this one day, and I thought that's it, meat and toast!! It's delicious, cheap, and a very satisying meal.
