Banana Oatmeal Pancakes

The banana pancakes were a huge hit the other day and my family loves the hearty texture of oatmeal pancakes, so I decided to combine the two. 



Ingredients:
  • 1 cup wheat flour
  • 1 cup oatmeal (quick oats) 
  • 1 1/2 tbsp baking powder
  • 1 1/2 cup water
  • 2 medium-size ripe bananas, chopped
  • 1/8 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Oil for frying


  • Mix together the mashed banana and water. Add dry ingredients and mix, leaving lumps in the batter.  Add up to another 1/2 cup water if pancake batter needs to be thinner.   Pour 1/4 cup of batter into a hot, lightly oiled frying pan. When bubbles rise through the middle of the pancake and break on the top, flip the pancake and cook until browned underneath.
