Easy Ingredient Garbanzo bean mock chicken salad (low fat, vegetarian, high fiber)


  • 1 (15 ounce) can chickpeas
  • 1 green pepper
  • pickles or celery, to taste, diced
  • 1/2 onion, diced
  • 1/2 cup vegan mayonnaise or ranch dressing (or fat free mayo substitute)
  • salt and pepper, to taste
  • mustard (optional)

Just blend the beans and mayo up in a food processor, varying the amount of mayo and blending time to make it smoother or chunkier. Then add in the chopped up celery and/or onions and seasoning.

Use this to make sandwiches, or put a big scoop of it on top of a salad. (you could add avocado or tomato if you like as well)
