The Roasted Smashed Cauliflower (low carb, Trim healthy Mama S)


  • 1 1/2 pounds cauliflower (1 average size head), cleaned
  • 1 T olive oil
  • 1/2 t garlic powder OR several cloves of fresh garlic
  • sea salt
  • black pepper
  • 2 T cream cheese
  • 2 T butter
  • 3 T heavy cream
  • Tiny pinch nutmeg
  1. Preheat oven to 450°
  2. Wash and clean cauliflower. In a bowl, break into florets, and add garlic cloves (if using).
  3. Drizzle with olive oil and season with granulated garlic (if using), salt and pepper.
  4. Roast at 450° for 30-35 minutes, stirring once. Cauliflower should be tender and golden brown.
  5. Place roasted cauliflower in a food processor or blender with cream cheese, butter, heavy cream and nutmeg. Process into a smooth puree.
  6. Adjust consistency with chicken stock or extra cream (it's best to do this when it's hot from the oven—it makes a smoother puree.) Taste and adjust seasonings. Serve piping hot!
