Quick One Pot Pasta (vegetarian, low fat)


  • 1 cup onion, chopped
  • 2 cloves garlic minced
  • 1 bell pepper, chopped
  • 1 cup chopped mushrooms
  • 1 cup chopped zucchini
  • 1 can diced tomatoes
  • 1 3/4 cup water
  • 1/2 cup dry tvp
  • 2 tbsp Italian herb seasoning
  • crushed red pepper flakes to taste
  • 2 cups shell pasta
  1. Sautee veggies in a little oil or water until they are tender. 
  2. Add can of tomatoes, italian seasoning, water, tvp, red pepper flakes, and pasta to pot. 
  3. Bring to a boil, than reduce heat and simmer about 10 minutes, stirring occasionally. 
  4. Until pasta and tvp have absorbed extra liquid.
